麥芽精的使用分量占配方粉量的0.3%~0.5% . 使用方法(1)直接把麥芽精放入麵粉中,攪拌均勻融入即可。(2)把麥芽精先放在少許的配方水中進行攪拌直到融化,然後再拌入麵粉混合,再倒入剩餘配方水。
