黃糖是曲奇柔軟的關鍵 , 千萬不要以白砂糖或糖霜取代 這配方大概能做20-30塊曲奇 如麵粉過分攪拌就會起筋,令曲奇口感不好
奶油室溫下放軟 , 加入白砂糖和黃糖打發至蓬鬆
加入雞蛋打至均勻即可 , 切忌過於打發
先把中筋麵粉,可可粉,梳打粉拌勻 過篩至奶油中 , 再加入鹽拌成麵團 , 切忌過份攪拌
把朱古力粒粒加入麵團拌勻
挖成一個個小圓球 , 麵團之間需要留有空位 , 因為它們會發大
預熱焗爐175度,烤10分鐘 出爐時曲奇很軟 , 有點像未熟的樣子 ,此時不要移動 待放涼後就會成為軟曲奇
